If you know me, you know I love my pumpkin protein bars. Want to know how I perfected these bars into perfect little macro-friendly fall treats? Follow the recipe below!
- 2 scoops vanilla or pumpkin protein
- 1 15oz can pumpkin purée
- 1 cup almond flour
- 1/2 cup ground oats
- 1 egg
- 1 tbsp coconut oil
- 1/4 cup sugar free syrup or almond/cashew milk
- 1/3 cup choice of natural sweetener
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp pumpkin pie spice
- 1/2 tsp vanilla extract
- pinch salt
Mix all ingredients until completely combined. Spray the pan, and spread evenly throughout. Bake at 350 for 30-35 minutes, or until top is golden and toothpick comes out clean. Macros per bar (1/12 of recipe): 4.5 f, 9 c, 7 p
